It’s almost summer! No matter the season, eating warm and cooked foods is always important. This delicious soup recipe is a great way to “warm up” to summer by incorporating fresh summer vegetables in a warm and nourishing soup. Enjoy!
Ingredients:
6C chicken broth (or bone broth)
1 lg carrot, diced
1 ½ C asparagus, chopped
1 C Green Peas
4 Scallions, sliced
1/3 C Fresh Dill
2 TBS Lemon Juice
Instructions: Bring broth to a boil over high heat. Add carrots and boil 5 minutes. Add asparagus and peas until vegetables are tender, about 5 minutes. Remove from heat, stir in scallions, dill and lemon juice. Add quinoa or wild rice for a heartier soup.
