While most Chinese herbal formulas are concentrated, not-so-tasty concoctions, miso soup is quite the opposite! The two main ingredients are miso (dan dou chi, in pinyin) and scallions (cong bai), which are both helpful to use in the early stages of a cold. These herbs are known for “releasing the exterior”, which means to vent a pathogen out of the body. Whenever I’m feeling the beginnings of a cold, I make the following miso soup recipe at home from Dr. Aviva Romm.
Ingredients:
1 yellow onion, diced
10 shiitake mushrooms, chopped
2 large carrots, sliced
1 teaspoon fresh grated ginger
2 quarts water
¼ C pieces of seaweed
4 gloves chopped garlic
¼ C organic red miso paste
1 bunch fresh scallions
Directions:
Sautee the onion, mushrooms, carrots, garlic and ginger
Add water
Simmer for 30 minutes
Dissolve in the miso paste
Garnish with freshly chopped scallions
Enjoy!
