Autumn is the time for root vegetables!! This delicious soup is a great way to get beets into your diet and have a hearty, delicious meal. To make a soup with a thicker consistency, add more tomato paste. Feel free to spice it up with other vegetables, spices or meat.
Ingredients
2 medium beets, peels & cut up in chunks
2 medium potatoes, peels & cut up in chunks
1 small onion, cut up
1 can tomato paste
3 carrots, peeled and cut up in pieces
½ bunch of kale
1-2 bay leaves
Black pepper
Salt
Veggie/Chicken/Beef Broth
Directions
Place all the ingredients (except kale) into a pot. Add enough broth to cover the vegetables by another 2 inches. Boil all ingredients together until veggies are soft, about 30 minutes, with the pot covered. Add kale in the last 15 minutes. Use salt and pepper to taste.
